CHARACTERISTICS:
It is one of the most used spices in Indian cuisine as a food coloring for rice, meat and various dishes.
Belonging to the Zingiberaceae family (like ginger). It has been cultivated for more than two thousand years in China and India. In the market we can find three spices. Madras (the most appreciated), allepey & Haiti.
